...but the old taxi services enabled monopoly behavior; stagnation, bad service, bad prices.

If we enable Uber to middleman all of the restaurants, they will be the new monopoly to restaurant services. Yes, Uber could encourage competition between restaurants, but the restaurants only have a monopoly on their own service. The competition between restaurants already exists!

Buying from a restaurant directly doesn't enable any kind of monopolistic behavior. Buying from Uber Eats & Friends will enable them to pressure restaurants, cancel orders or change charges with impunity; over time, restaurants will not be able to maintain its own drivers or tooling to enable delivery outside of the SaaS pieces.
